The Best Cookies You'll Ever Bake!
As tested by the children. . .
This is a great recipe to try out with young'ish children.
The cookies are absolutely delicious, like you'd buy from your bakery, or supermarket. Much nicer than the cheap 'barrel filler' cookies you can buy. I'm sure there's lots of different kinds of chips you use too...I intend to try chopped up rolo's in the near future to see if it works.

Ingredients:
- 225g softened butter/margerine
- 200g sugar (granulated or caster)
- 200g soft brown sugar
- 375g plain flour
- 2 eggs, free range if you can
- 1-2 tsps vanilla essence/extract/flavouring
- half tsp bicarbonate of soda
- approx 15ml hot water
- pinch salt (about 1/4tsp)
- 300g 'chips' of your choice. I used 3 100g white chocolate bars smashed to smithereens!
Method:

Method:
1) Preheat oven to 180C/Gas 4/350F
2) Add both sugars and the butter to a bowl and combine until creamy.
3) Add the bicarbonate of soda to the 15ml hot water and stir until completely dissolved, then add it to the main mixture.
4) Add the eggs...
...vanilla...
...and salt. And mix together until combined.
5) Finally, sift in the flour. Best to do this bit by bit or you will be lost in a cloud of flour dust and be finding flour patches for days where it's settled. Mix for a good couple of minutes to allow plenty of air into the dough.
6)Add the chocolate chips/chunks and mix well. If doing this in a mixer I'd recommend doing so on a slow speed as they don't like chunky pieces very much!
7) On a greased baking tray/sheet start dropping balls of dough, about a tablespoon's worth. The cookies expand rather a lot during baking so try to leave about 5-6cm between them.
8) Bake for about 12-15mins. When done the cookies should be slightly browned but still soft and squidgy to touch. As you can see, I need to practise leaving space between them myself...
Repeat steps 7&8 until all dough is used up.
Or eaten!

I really hope you enjoy this recipe, it's now one of my favourites. Mind you, they're all my favourites when I've done them successfully! Baking makes me feel good, it can make a rubbish day feel better and a rainy day a little more exciting.
