Cheats Toad In The Hole
This is a really satisfying quick-ish meal if you're tired or don't have a great deal of time for preparation.
I don't have any pictures to go with this as I keep forgetting to take one when I've previously made it.
All you need is:
- a packet of batter mix - I use Sainsburys basics batter mix which is just 10p a pack!!
- a pack of sausages (cumberland works fantastically - really tasty)
- 1 egg
- 200ml water
- couple tablespoon's oil.
Equipment wise you only need a mixing bowl, a balloon whisk and a roasting tin/dish.
And this is what you do:
(note: I don't do it exactly the same way as the packet but I imagine the results are all the same)
1) Brown the sausages in a frying pan - or grill if you prefer. Once done, set to one side. (you don't need to fully cook these as they will cook thoroughly in the oven later, at this stage you just need to brown the skins)
Preheat your oven to 220C/425F/Gas 7
2) Pour the batter mix into the mixing bowl.
3) In a jug, whisk together the egg and water.
4) Make a well in the centre of the batter mix and pour in the egg/water mix.
5) Whisk together until nice and smooth making sure to include the flour from the sides of the bowl. Set to one side.
6) Place a little oil in your roasting tin and place in the oven to heat up - only need to do this for a couple of minutes.
7) Remove tin from oven and place your browned sausages in the tin.
8) Pour the batter mix over the sausages.
9) Place in the oven and cook for about 30-40 minutes. (Please do check after 30mins just to be sure)
10) Serve with vegetables and gravy (minted gravy if you're like my husband).

This is one of my husbands favourite meals and it is so easy to make, and cheap too. I haven't quite mastered the supposedly simple task of making yorkshire puddings and toad in the hole from scratch but I will continue to try and once I've cracked it I'll post it.
