Peach Cobbler
I adore this recipe. Does it class as a cake or a pudding? I mean, it uses a cake batter, but it's still quite gooey and squidgy? Ho Hum...it's lovely so I care not about it's classification.
You Will Need:
approx 7 ripe peaches/nectarines, peeled if you wish but not necessary.
100g sugar
1tsp vanilla essence
(if you don't have fresh fruit then you can use 2 cans of peaches in syrup without the sugar)
300ml milk
350g self raising flour
125g butter or margarine
100g caster sugar
pinch (1/4tsp) salt.
What to do: Preheat oven to 180C/350F/Gas 4 Grease a large oven dish, or medium roasting tin.
Slice fruit in half and remove stones, peel if you want to however I didn't. I also used nectarines as they were cheaper. Slice fruit into thin slices, about 0.5cm. Place all your thin slices in a mixing bowl.

Once you've sliced all your peaches/nectarines, pour the sugar over and vanilla if using. Using a spatula or large spoon stir gently but well until combined. Set this bowl to one side to juice-i-fy.
In a separate bowl, place your flour, sugar, milk and salt, melt your butter and add to the mixture. Start to combine together to make a nice thick batter. If you want you can use a mixer for this to save your arms but I find it turns out better doing it by hand using a balloon whisk.
Once that is all done, grab the bowl with your sliced fruit in, by now it should be positively swimming in juices! Pour a little batter over the bottom of the greased oven dish/tin, then pour over a layer of peaches, then a layer of batter, then a layer of peaches... Your top layer should be batter.
Pop it in the oven to bake for about 40 minutes, definitely check with a wooden kebab skewer though after this as all oven's vary and your cobbler may not be quite ready even if it's golden on top. Keep baking and checking periodically until it's slightly crunchy looking and golden on top.

This cobbler is best served hot so once your cobbler is cooked, whip up some double cream in your mixer - pop in a little icing sugar to sweeten if you like - and serve!
