Mince Pies
2) Slowly add the egg (if you're using a mixer too you may want to replace your beater with a dough hook).
3) Combine until the mixture comes completely together. Wrap the dough in clingfilm and place in the fridge for an hour or so, when it comes out it will be much easier to handle and cut.
4) Preheat your oven to 180C and grease a 12 hole bun tin.
5) Roll out your dough (thinly, about 5mm) on a floured surface using a floured rolling pin to prevent sticking. Cut out 12 circles large enough to fit in your tray, mould them to fit in the holes. Re-roll if necessary then cut out 12 smaller shapes for the toppers, I used stars, angels, holly leaves and Christmas trees. Place these on a baking tray lined with baking parchment.
6) Place 1-2tsps of mincemeat in your circles.
7) Place your pies in the oven to bake first. They will take approximately 15 minutes to bake, after they've been in for about 8 minutes, place the toppers in for the remaining time.
8) Allow to cool. If you're wanting to pipe some cream on top whip up some double cream in your mixer whilst the pies are cooling, scoop into a piping bag and squirt a generous dollop on top of the mincemeat. Press a topper on.
I personally think these are best served warm so if they're for a party you may be better off placing your whipped cream in a bowl and allowing guests to get their own spoonful for their little treat.
Whichever way you choose to serve them just be sure to enjoy them! :)
